Broiled Chicken Breast & Stir Fried Vegetable Soup

  • 1 skinless & boneless chicken breast
  • 16 oz. chicken broth
  • 14 oz. can diced tomatoes
  • 2 cups diced green cabbage
  • 1 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced broccoli stem
  • 1/2 cup broccoli flowers

1 dash - 1/4 teaspoon
1 pinch - 1/8 teaspoon
juice of 1 lemon -
    2 to 3 tablespoons
juice of 1 orange -
    about 1/2 cup
Step 1: In the first step there are three things that can be done at the same time. (1) Broil the chicken breast, (2) Stir fry the cabbage, carrots, celery, & broccoli in approximately two tablespoons of olive oil, (3) Combine the chicken broth and diced tomatoes in a pan and heat.
Step 2: Once the first step is complete, add the stir fried vegetables to the pan containing the chicken broth and diced tomatoes. Cut or shred the chicken breast and add it to the pan. Make sure to heat the combined ingredients thoroughly.
Step 3: Serve and enjoy!

Note: You may substitute a little butter for the olive oil in the stir fry. You may also add your favorite herbs and spices.
